Guacamole

Ingredients:

  • 1 avocado

  • 1 tomato/ 3 wine tomatoes

  • corriander

 

Directions:

Smash avocado with a fork or blender, add chopped tomato and corriander.

Guacamole is best made as close to serving as possible as its turning dark quickly. For short-term storage, seal in an airtight container with a piece of plastic wrap directly against the surface of the guacamole. 
Enjoy this nutrition dense food alone, with celery sticks as a dip, on salad or in a wholewheat tortilla.
